If you already know what weight you want, a fixed trigger removes the temptation to keep fiddling and gives you the same pull every time you pick the rifle up. Three pounds is a common competition setting — quick enough for a stage, controlled enough to be sensible. If you would rather experiment, an adjustable Adaptable or Diamond model makes more sense.
A flat bow gives you a consistent point of contact and a press that runs straight to the rear, which helps with repeatability when you are shooting to a standard. It also feels slightly lighter at the bottom of the shoe because of where the leverage falls, even though the measured weight is unchanged.
